- 4 Large eggs, separated
- ½ Cup of organic sugar
- 1/3 Cup of olive oil
- 1/3 Cup of low-fat Greek yogurt
- 1 Teaspoon of lime zest
- 1 Teaspoon of orange zest
- 1 Tablespoon of lime juice
- 1 Tablespoon of orange juice
- ½ Teaspoon Salt
- 1 Cup of flour
- Confectioner’s sugar to dust on top
- Preheat oven to 350 degrees. Line springform pan with parchment paper and use a few drops of olive oil to grease paper.
- With the electric mixer, beat egg whites and ¼ cup of sugar until soft peaks form. Set aside.
- Mix egg yolks and remaining sugar. Add yogurt, salt, the olive oil, zest and juice. Mix well and add the flour. Mix again.
- Gently fold the egg whites until there are no white streaks. Bake for 45 minutes.
- To serve, dust top with confectioner’s sugar and slices of oranges or grapefruit.
