2-Step Roasted Tomato Soup

There’re so many wonderful benefits of eating tomatoes. Did you know that a daily serving of tomato-based foods can help reduce heart disease, prevent kidney and gall bladder stones, reduce the risk of blood clots and increase our fat burning capacity?



That’s why we love them on everything! We love them in sauces, stews, salads and especially soups. One of our favorite recipes for tomato soup only takes two simple steps to make. You roast all of your ingredients and then blend them. Voila!

2-Step Roasted Tomato Soup – Ingredients:
  • 8-9 Vine tomatoes, quartered 
  • ½ Onion, peeled and quartered
  • 5 Garlic cloves, peeled
  • ½ Cup of cubanelle peppers, sliced
  • 2 Teaspoons of dried basil
  • 2 Teaspoons of brown sugar
  • Olive oil and salt to taste
  • 1 ½ Cups of water
  1. Preheat oven at 350 degrees. Place all veggies on a baking sheet. Drizzle olive oil and sprinkle salt to taste, sugar and basil. Bake for 45 minutes.
  2. Put all the ingredients in your blender. Add water and mix. Done!
