Bali Kebabs

Browsing through the Instagram stories a few days ago, we saw YouTuber Mark Weins showing how a chef in Bali was preparing kebabs with lemongrass as skewers. We thought that was genius and immediately ran to Fresh Farms International Market for everything we needed. We couldn’t remember exactly how the kebab meat was seasoned, but played with the flavors of that region. We also came up with a side salad to go along. Hope you enjoy!

Bali Kebabs (Makes 12 kebabs for 4 people)
  • 6 Lemongrass sticks (skewers)
  • ½ Pound of ground pork
  • ½ Pound of ground beef
  • 3 Tsp. grated fresh turmeric
  • 3 Tsp. grated fresh ginger
  • 3 Tsp. chopped cilantro
  • 4 Cloves of garlic, minced
  • ½ Cup finely chopped shallots
  • ¼ Cup of finely chopped peppers (we used mild peppers, but you can use spicy)
  • 1 Pinch of cumin
  • 1 Pinch of salt

  1. Prep the lemongrass sticks by cutting them in half and gently mashing the end where you’re putting the meat. (These are great for grilling, but you can also cook on the stove or oven.)
  2. Mix all the meat ingredients and place a small handful on the skewers. (Watch video)
  3. Cook until meat is cooked and a bit charred on the outside.

Bali green and purple salad
  • 1 Cup of green beans, sliced in half
  • 1 Cup of purple cabbage, thinly sliced
  • 1 Cup of bean sprouts
  • 2 ½ Cups of fresh spinach
  • ½ Cup finely chopped shallots
  • 2 tbsp. of olive oil or coconut oil
  • 2 Tsp. grated turmeric powder
  • 2 Tsp. grated fresh ginger
  • 2 Cloves of garlic, minced
  • 2 tsp. of lime juice
  • 2 tsp. of fish sauce
  • 2 tbsp. of honey (optional)

  1. Sauté shallots, ginger and garlic in the oil until fragrant. Add the green beans and cabbage and cook for 4 minutes on medium heat.
  2. Add the sprouts and seasonings. Add the lime juice and fish sauce. Mix well and cook for 2 minutes.
  3. Turn off the heat and add the spinach. Cook with remaining heat. Serve with rice and kebabs.
