Halloween brownie cheesecake bites

Halloween is around the corner! Time to treat your neighbors to more than a bag of candy. Make something fun and easy that everyone will remember, like these delicious brownie cheesecake bikes! To uncomplicate things, we used our favorite brownie mix, but made the cheesecake portion a bit more interesting by adding queso fresco and Mexican crema to the mix. Those two ingredients make our cheesecake a bit lighter that its traditional counterpart. Take a look at our recipe and let us know what you think. Happy Halloween everyone!


Ghost bites — Ingredients:
  • Your favorite brownie mix (You might need additional ingredients to prepare it.)
  • ¾ Cup queso fresco
  • ½ Cup of organic sugar
  • 1 ¼ Cream cheese
  • ½ Cup Mexican crema
  • 1 Tsp vanilla extract
  • 2 Organic eggs
  • Parchment paper
  • Butter 



  1. Preheat oven at 350 degrees. Cover your mold with parchment paper and grease the paper with butter. This step will allow you to easily remove the brownies.
  2. Prepare the brownie mix by following the instructions on the box. Bake at 350 degrees for about 20 minutes or until crust starts to form on top.
  3. While it bakes, prepare the cheesecake. Whip the cream cheese until soft and run the queso fresco through the food processor until soft. Combine both.
  4. Add the rest of the ingredients and mix well. Pour mix on top of the brownie and bake for 35 minutes or until a knife comes out clean. Decorate with spooky eyes or anyway you like.
