Cheesy Kale Bites

Pi Pizzeria in St. Louis has the most delicious appetizer squares. We were told they were like cheese sticks, but healthier — made with kale and mushrooms and lots of creamy Fontina cheese. It pairs perfectly with a healthy lunch salad or just a glass of wine at the end of a long workday.


We decided to come up with our own version of the recipe and luckily, it turned out very close to the original. It’s also very easy to make. Just dump a few ingredients in your food processor and bake for a bit. Here’s the recipe.

Cheesy Kale Bites
  • 4 Cups of Kale, without stems
  • 1 2/3 Cups of Fontina
  • ½ Cup Pecorino Romano 
  • 1 Tablespoon of garlic powder
  • 1 Tablespoon of onion powder
  • 1 pinch salt and pepper
  • 7-8 Large mushrooms (white or cremini mushrooms)
  • 1 ½ Cups of Bread Crumbs
  • 2 Eggs
  • Olive oil

Preheat oven to 350 degrees. Brush baking sheet with oil

Place kale in food processors until well chopped. Add mushrooms and chop well. Add the rest of the ingredients and process until you get an even paste.

Form circles with the paste and place in baking sheet. Cook for 20 minutes and let it rest. Serve over marinara, pesto or your favorite sauce.
