Sweet Potato Brownies

As if eliminating sugar from your diet wasn’t hard enough, it gets particularly hard during the holidays. And we’re not talking about cookies and the eggnog! People are sprinkling the magical crystals in pretty much EVERYTHING. Nut butters and dried fruit, sauces and soup, meat marinades and salad dressing… It’s everywhere!


While we might make a few exceptions here and there (It’s the holidays after all.), we’re trying to find clever ways to cut that sugar as much as possible, including when it comes to desserts. One of the best dessert recipes we found was developed by Kevin Curry from Fit Men Cook. His healthy post-workout sweet potato brownies offer just the right amount of sweetness without the refined sugar.

The result tastes on the healthier side, but we made a few tweaks that will make it taste even more like dessert. Follow the recipe and let us know what you think.

Sweet Potato Brownies
  • 2 Small Sweet Potatoes 
  • ½ Cup of oatmeal flour
  • 1 Zucchini, shredded
  • 1 Small banana
  • ½ Cup of unsweetened cocoa powder
  • ½ Cup of coconut sugar
  • 1.5 Tsp baking powder
  • 2 Eggs
  • 2 Egg whites
  • 1/3 Cup of raw organic honey
  • ½ Cup of crushed walnuts (optional)

1. Bake or microwave your sweet potatoes until tender. Let them rest. Remove the skin.

2. Mash your sweet potatoes with your zucchini and banana. Incorporate the rest of the ingredients.

3. Bake at 350 degrees for about 35 minutes or until a knife comes out clean.
